Chocolate Potato Cake - cooking recipe

1 medium-size baking potato, peeled and cut into 1 1/2-inch pieces (about 6 oz.)
3/4 c. boiling water
1/2 c. firmly packed dark brown sugar
1/2 c. light-colored corn syrup
1/4 c. vegetable shortening
1 egg
1/2 c. unsweetened cocoa
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 Tbsp. powdered sugar
Preparation

Coat a 6-cup Bundt pan with vegetable cooking spray; dust with 1 tablespoon flour and set aside.
