Ingredients

3 medium onions
3 Tbsp. butter or margarine
3 pt. (6 c.) beef stock
3 Tbsp. grated Parmesan cheese
salt and pepper to taste
2 Tbsp. chopped parsley (garnish)
4 or 5 slices toasted bread and additional Parmesan cheese
Preparation

Peel and slice onions thin.
Melt butter or margarine in saucepan. Saute onion until lightly browned.
Add beef stock and seasonings.
Simmer for 10 minutes. Add parsley and cheese.
Pour into bowls.
Top with small slices of toast sprinkled with cheese.
