Old Fashioned Irish Stew - cooking recipe

Ingredients
    12 potatoes, peeled
    4 onions, cut in rings
    2 1/2 lb. lamb, cubed
    salt
    fresh ground black pepper
    1 or 2 carrots, sliced
    1 sprig chopped thyme
Preparation
    Cut 4 potatoes in slices and quarter the rest.
    Layer potato slices in a baking dish.
    Add half of the onion rings and the meat. Season with salt, pepper and thyme.
    Add the remaining onions, carrots and potatoes in the pan.
    Season.
    Pour in 2 cups of water. Cover the pan with aluminum foil and place a lid on top.
    Cook in oven at 350\u00b0 for about 2 1/2 hours.
    The last 15 minutes of cooking, remove cover to lightly brown.
    Serve.
