Basic Roux(For All Stews And Gumbos) - cooking recipe
Ingredients

1 c. all-purpose flour
1 c. cooking oil or margarine
Preparation

Heat oil in heavy pot or Dutch oven.
When oil is hot, gradually add flour, stirring continuously until well mixed. Lower flame; continue stirring until chocolate brown.
Remove from pot; set aside.
If roux remains in pot, it will continue to cook and get too dark.
