Ingredients

1 egg
3/4 c. pancake mix
1 c. milk
1 Tbsp. oil
3 medium potatoes, peeled and grated
1 Tbsp. instant minced onion
Preparation

Beat egg in a medium bowl.
Stir in all remaining ingredients in order until almost smooth.
Heat a lightly greased skillet or griddle, using 1/4 cup batter for each pancake.
Fry until golden brown, about 4 minutes on each side.
Serve hot with applesauce or sausages.
