Brown Rice Casserole - cooking recipe

Ingredients
    3 c. chicken broth
    1 tsp. salt
    1/2 tsp. basil
    1/2 tsp. thyme
    1 c. brown rice, uncooked
    2 Tbsp. salad oil
    1 1/2 c. diced eggplant
    1/2 c. chopped onions
    1 garlic clove, crushed
    1 c. sliced zucchini
    1/2 c. chopped green pepper
    1 large tomato, cubed
    2 c. (8 oz.) shredded Swiss cheese
Preparation
    In a medium saucepan, heat the chicken broth to boiling.
    Add salt, basil, thyme and rice. Reduce heat.
    Cook, covered, until liquid is absorbed, about 45 minutes.
