Grilled Vegetable Medley - cooking recipe

Ingredients
    1 Tbsp. fresh minced parsley
    1/2 tsp. garlic powder
    1/4 tsp. ground black pepper
    3 Tbsp. apple cider vinegar
    1 Tbsp. olive oil
    18 baby yellow squash (about 1/2 lb.)
    1 large sweet red pepper, cut into 1-inch pieces
    3 small zucchini, cut lengthwise into quarters
    vegetable cooking spray
Preparation
    Combine first 5 ingredients; stir well.
    Add squash, red pepper and zucchini; toss gently.
    Arrange vegetables in a wire grilling basket coated with cooking spray.
    Place on grill over medium-hot coals.
    Cook 10 to 12 minutes or until tender, turning once.
    Serves 6.
