Cornish Hens In Dutch Oven - cooking recipe

Ingredients
    6 Cornish hens
    1/3 c. butter or olive oil
    3/4 c. chopped parsley
    1/2 c. chopped green pepper
    2 cloves minced garlic
    1 medium onion, diced
    3/4 c. white wine
    2 cans tomato sauce
    1 can mushrooms
    pinch of thyme
    pinch of rosemary
    salt and pepper to taste
Preparation
    Put butter or oil in hot Dutch oven and fry the birds, turning them until browned on all sides.
    Add parsley, green pepper, garlic and onion.
    When these are tender, add wine.
    Cover the oven and simmer over low coals.
    In a few minutes, add the tomato sauce, mushrooms and seasonings.
    Simmer slowly for 1 1/2 hours. Good dish to serve over noodles.
