Chicken Spoon Bread - cooking recipe
Ingredients

1 c. corn meal
1 1/2 c. chicken broth
1 tsp. baking powder
2 Tbsp. melted shortening
chicken gravy
1 1/2 c. milk
3 eggs, separated
1 1/2 tsp. salt
2 c. cubed cooked chicken
Preparation

Combine corn meal, milk and chicken broth.
Cook and stir over low heat until thickened.
Add beaten egg yolks, salt, baking powder, shortening and chicken.
Mix well.
Beat egg whites until stiff and fold into cornmeal mixture.
Turn into greased baking dish and bake at 325\u00b0 for 1 hour.
Serve at once with chicken gravy.
Yields 6 to 8 servings.
