Eggplant Stew(Berenjenas Guisadas) - cooking recipe
Ingredients

1/4 lb. smoked ham
2 tomatoes
2 green peppers
2 onions
2 Tbsp. vegetable oil
2 lb. eggplant, cut into 1-inch pieces
1 Tbsp. salt
1/4 c. water
Preparation
-
Cut ham and vegetables in small pieces and fry lightly.
Add water and eggplant.
Add salt to taste; stir.
Cook at low heat for about 20 minutes.
