Basque Stew - cooking recipe

Ingredients
    1/2 lb. pepperoni
    1 chicken breast (12 oz.)
    1 leek, chopped (can use onion)
    2 cloves garlic, minced
    4 medium carrots, sliced
    2 c. shredded cabbage
    2 cans kidney beans
    1 (16 oz.) can tomatoes
    1 1/2 tsp. salt
    1 tsp. thyme
    1/2 tsp. pepper
Preparation
    Saute pepperoni about 5 minutes and remove.
    Saute chicken strips in pepperoni drippings.
    Add leek, garlic and carrots and saute for 3 minutes.
    Stir in cabbage.
    Add tomatoes, beans, seasonings, pepperoni and chicken.
    Bake at 325\u00b0 for 1 hour and 15 minutes.
