Ted'S Eggs - cooking recipe

Ingredients
    4 jumbo eggs (brown or white)
    1 Tbsp. cottage cheese
    2 tsp. butter
    salt and pepper to taste
    3 to 4 dashes hot sauce (Texas Pete preferred)
Preparation
    Melt butter in cast-iron or nonstick medium size skillet. Break eggs into skillet, stirring constantly with spatula.
    When eggs are set, but not dry, fold in cottage cheese.
    Serve at once on preheated plates.
