White Beans With Tomato, Basil And Parmesan - cooking recipe

Ingredients
    1 Tbsp. olive oil
    3 cloves garlic, minced
    3 c. cooked navy beans, Great Northern beans or white kidney beans
    1 large tomato, chopped
    1/4 c. minced fresh basil or parsley
    1/2 c. grated Parmesan cheese
    1 Tbsp. lemon juice
Preparation
    In a 12-inch nonstick skillet, heat the oil over low heat.
    Add the garlic and cook, stirring occasionally for 4 minutes or until lightly colored and fragrant.
    Stir in the beans, tomato and basil. Cook for about 7 minutes or until heated through.
    Stir in the cheese and lemon juice.
    Serve hot or at room temperature.
    Serves 4 as a main dish, or 8 as a side dish.
