Blueberry Fool - cooking recipe
Ingredients

1 pt. blueberries
1/4 c. sugar
1 1/2 tsp. cornstarch
1 tsp. grated lemon rind
1 pkg. cream cheese (3 oz.)
1/4 c. 10x sugar
1 tsp. vanilla
1 c. heavy cream
Preparation

Put blueberries in medium size pan.
Mix sugar and cornstarch; sprinkle over berries.
Cook over medium heat, stirring often and crushing a few berries until mixture thickens slightly and bubbles 1 minute.
Remove from heat; cool.
Pour into 4 to 5 cup glass bowl; cover and refrigerate several hours.
Beat cream cheese until soft.
Blend in sugar and vanilla until fluffy and soft peaks.
Spoon cream cheese mix on top of berries; then gently fold in, leaving streaks of blue and white.
Sprinkle with rinds. Refrigerate.
