Sauteed Scallops With Garlic And Tomatoes - cooking recipe
Ingredients

1 1/2 lb. scallops, cut in half, rinsed and dried well
flour to coat
3 Tbsp. butter and 3 Tbsp. oil
3 cloves garlic, minced
salt and pepper
1 large tomato, cut into small chunks
1/2 c. minced, fresh parsley
Preparation

Roll scallops in flour.
In skillet, heat oil and butter; cook scallops 3 to 5 minutes over medium heat, shaking pan to turn scallops.
Add salt and pepper.
Add tomatoes and cook briefly until soft, then add parsley.
Toss scallops to coat.
Can serve with rice.
