Watermelon Rind Pickles - cooking recipe

Ingredients
    1 small watermelon rind (about 2 qt.)
    1 c. sugar
    1/2 tsp. salt
    1/2 c. water
    1/2 c. vinegar
    1 Tbsp. pickling spice
Preparation
    Remove the green skin from the rind and dice it into 1-inch cubes.
    Soak rind overnight in salt water; drain well in the morning.
    Make syrup of the other ingredients, bringing just to a boil.
    Add the rind and cook until tender, about 1 hour.
    Makes 4 pints.
    The pickles can be canned.
