Diabetic Potato Cakes - cooking recipe

Ingredients
    6 medium potatoes
    1 large onion
    2 eggs
    1/4 c. flour
    1 tsp. salt
    vegetable oil
Preparation
    Peel and grate potatoes in paper towels.
    Squeeze out excess water and place potatoes in mixing bowl.
    Peel and grate onion into potatoes.
    Add eggs and milk.
    Mix in flour and salt.
    Heat oil in skillet.
    Drop tablespoon of batter into skillet.
    Fry on both sides until crisp and brown.
    Drain on paper towels.
    Serve warm with apple sauce.
    Yields 36.
