Shredded Pork(Mochonos) - cooking recipe

Ingredients
    2 lb. boneless pork shoulder
    2 c. water
    1 small onion, quartered
    1 tsp. salt
    2 c. guacamole
    tomato slices
    shredded lettuce
Preparation
    In saucepan, bring meat, water, onion and salt to boiling; simmer, covered, for 1 hour until meat is tender.
    Uncover; boil rapidly 15 to 20 minutes or until most of water evaporates.
    Watch closely and stir so meat doesn't stick.
    Using 2 forks, finely shred meat.
    In lightly greased skillet, fry meat until it resembles golden threads.
    Put on platter and garnish with lettuce, tomato slices and guacamole.
    Serve with warm tortillas.
