Eggplant A La Riegeldale - cooking recipe

Ingredients
    1 medium eggplant
    1 1/2 c. grated cheese
    1 1/2 c. milk
    1 tsp. salt
    1 stick butter
    4 eggs
    1/2 tsp. pepper
Preparation
    Peel and slice eggplant; cook until mushy done.
    Drain.
    Add all other ingredients, except 1/2 cup cheese, 1/2 cup cracker crumbs and a little of the butter.
    Mix well and put in baking dish.
    Sprinkle with reserved cheese, crumbs and butter mixture. Bake in moderate oven, about 25 or 30 minutes.
    Serves 6 to 8 people.
