Good Luck Black-Eyed Pea Soup(Men Love It!) - cooking recipe

Ingredients
    1 lb. black-eyed peas
    6 slices bacon
    2 c. chopped onion (approximately 1 onion weighing 1/2 lb.)
    vegetable oil (if needed)
    1 Tbsp. all-purpose flour
    1 (14 1/2 oz.) can undrained whole tomatoes (Contadina preferred)
    2 gloves garlic, pressed or finely minced
    1 tsp. Worcestershire sauce
    1/4 tsp. Tabasco
    1 1/2 tsp. salt
    1/2 tsp. coarsely ground black pepper
    1 tsp. Knorr Swiss Aromat all-purpose seasoning (optional-add more salt if not using)
    1 Tbsp. white wine vinegar (optional, but adds zest)
    1 1/2 tsp. liquid smoke
Preparation
    Rinse peas.
    Place in large soup kettle and cover with water. Place lid on kettle and bring to a boil.
    Reduce heat to medium and simmer 2 minutes.
    Set aside, tightly covered, for a minimum of 1 hour.
    Can leave for 3 to 4 hours.
