Pineapple Cheese Casserole - cooking recipe

1 (15 1/2 oz.) can unsweetened pineapple chunks
1 (20 oz.) can unsweetened crushed pineapple
1 c. coarsely grated cooked carrots (about 3 carrots)*
3/4 c. granulated sugar
6 Tbsp. flour
2 c. shredded Cheddar cheese
1/2 c. melted margarine
1 c. crushed Ritz crackers
Preparation

Drain pineapple, reserving 6 tablespoons of juice.
Combine sugar and flour; add juice, cheese, carrots and pineapple.
Place in a 2-quart casserole dish.
Combine margarine and crumbs; sprinkle on top.
Bake at 350\u00b0 for 20 to 30 minutes, uncovered. Very colorful in a glass dish (fall colors for Thanksgiving).
