Pork And Green Chili Casserole - cooking recipe

Ingredients
    1 1/2 to 1 3/4 lb. boneless pork shoulder roast (tri-tip is okay)
    1 Tbsp. oil
    1 (14 1/2 oz.) can diced tomatoes
    1 c. Minute rice
    1/4 c. water
    1 to 2 Tbsp. salsa
    1/2 c. shredded Cheddar cheese
    1 (15 oz.) can pinto beans, rinsed and drained
    1 (10 3/4 oz.) can condensed cream of chicken soup
    1 (4 oz.) can diced green chili pepper, drained
    1 tsp. cumin
Preparation
    Stir-fry pork half at a time in hot oil.
    Drain.
    Stir in remaining ingredients, except cheese.
    Heat and stir just until bubbly.
    Pour into a 2-quart casserole.
    Bake, uncovered, in a 375\u00b0 oven 25 minutes.
    Sprinkle with cheese; bake until cheese melts.
