Fluffy Banana Cake - cooking recipe

Ingredients
    1 c. mashed bananas
    1/2 c. soft shortening
    2 eggs, unbeaten
    1 1/2 c. sugar
    1 tsp. vanilla
    1/4 c. buttermilk or sour milk
    2 c. sifted flour
    1/2 tsp. baking powder
    3/4 tsp. baking soda
    1/2 tsp. salt
Preparation
    Beat on high for 1 1/2 minutes, shortening, eggs, sugar and vanilla.
    Add milk.
    Add sifted flour mixture alternately with mashed banana while on medium speed, beat only enough to blend, about 2 minutes.
    Pour into 2 layer pans or 1 large pan (greased and floured).
    Bake at 350\u00b0 for 30 to 35 minutes.
    Top with whipped cream or fluffy white frosting.
