Parsley Fries And Eggs - cooking recipe

Ingredients
    6 medium potatoes, cooked and cubed
    1/4 c. oil
    1/4 c. butter or margarine
    1 Tbsp. dried parsley flakes
    1 tsp. salt
    1/2 tsp. pepper
    6 eggs
Preparation
    Heat oil and butter in large skillet. Add cubed potatoes, seasonings and stir well. Fry slowly on medium-low heat until golden brown. Push potatoes to one side and break eggs into skillet. Mix both together when eggs are almost done. Makes 6 servings.
