Eggplant Casserole - cooking recipe

Ingredients
    2 large eggplant
    1/2 lb. mild cheese, grated
    2 beaten eggs
    1/2 medium onion, chopped
    2 Tbsp. butter
    2 c. milk
    1 small can pimento
    2 c. cracker crumbs
    salt and pepper to taste
Preparation
    Boil cut up eggplant until soft.
    Drain and mash.
    Add all ingredients and mix well.
    Save some grated cheese to sprinkle on top.
    Bake in casserole dish at 400\u00b0 until thickened.
