Neapolitan Spumone - cooking recipe

Ingredients
    2 c. milk
    1 1/4 c. sugar
    4 egg yolks
    1 tsp. pure vanilla extract
    1/4 tsp. almond extract
    1 1/2 c. whipping cream
    4 drops green food coloring
    4 drops red food coloring
    1/4 c. chopped candied cherries
    1/4 c. chopped toasted almonds
    1 Tbsp. diced candied orange peel
    2 Tbsp. cocoa
    1 Tbsp. rum
Preparation
    Combine milk, 1 cup sugar, egg yolks and flavoring extracts. Cook, stirring, until custard begins to boil.
    Chill in freezer until softly frozen.
    Fold in half whipped cream.
    Divide into 2 equal parts.
    To 1 part, add green food coloring.
    To the other, add red food coloring, cherries, almonds and orange peel.
    Freeze partially, about 1 hour, stirring now and then, until spreading consistency.
    Mix remaining whipped cream with 1/4 cup sugar, cocoa and rum.
    Chill.
