Tofu Cheesecake - cooking recipe
Ingredients

1 granola pie crust
1 (16 oz.) pkg. tofu, crumbled
1/3 c. honey
1/4 c. unbleached white flour
1 1/2 tsp. vanilla
2 Tbsp. lemon juice
3/4 tsp. lemon extract
2 Tbsp. oil
1/4 c. water
1/2 tsp. salt
Preparation

Have ready 1 granola pie crust.
Combine the remaining ingredients in a bowl.
Place half of the mixture in a blender and whiz until very smooth.
Empty blender into crust.
Repeat with other half.
Smooth out the top.
Bake at 350\u00b0 for 45 minutes. Chill thoroughly and serve.
Top with your favorite topping or fresh fruit, if desired.
