Fatoosh - cooking recipe

Ingredients
    6 loaves pita bread
    2 bunches scallions
    3 Tbsp. dried mint
    3 cucumbers
    1 bunch parsley
    4 tomatoes
    3 to 4 lemons
    1/2 c. olive oil
    salt and pepper to taste
    1/2 head romaine lettuce
Preparation
    Toast bread in 350\u00b0 oven until crunchy and break into small pieces.
    Place in large bowl.
    Cut cucumbers and tomatoes in small chunks.
    Mince parsley.
    Put all of these vegetables over the bread.
    Add mint, lemon juice, olive oil, salt and pepper to taste.
    Mix well; serve over romaine lettuce.
