Creamy Chicken And Broccoli Casserole - cooking recipe

3/4 c. long grain rice (converted rice)
1 can Healthy Request cream of mushroom soup
1 soup can skim milk
3 Tbsp. lemon juice
2 c. diced, cooked chicken
3 c. frozen chopped broccoli
1 small can sliced water chestnuts, drained
3/4 c. shredded light Cheddar cheese
Preparation

Spray a 2 1/2-quart casserole with nonstick cooking spray. Combine in the casserole the rice, soup, skim milk and lemon juice.
Stir to combine.
Fold in chicken, broccoli and water chestnuts.
Sprinkle with cheese.
Cover and bake for 30 to 40 minutes or until rice is cooked and cheese is melted.
Makes 6 (1 1/2-cup) servings.
