Stuffed Vidalia Onions - cooking recipe

Ingredients
    4 Vidalia onions
    1/2 c. bread crumbs
    1/2 c. bell pepper
    salt to taste
    1 lb. ground beef
    1 c. cooked rice
    4 slices Mozzarella (optional)
Preparation
    Peel and core onion.
    Retain centers and chop well.
    Mix ground beef, 1/2 cup chopped onion, bread crumbs, rice and bell pepper.
    Season to taste.
    Mix well.
    Form mixture into small meat balls and fill each onion shell.
    Bake at 350\u00b0 for 30 to 45 minutes.
    If desired, just before serving, add on a slice of Mozzarella cheese to each onion and heat until melted.
