Lo-Cal Egg Nog - cooking recipe

Ingredients
    3 eggs, separated
    1 Tbsp. sugar
    3 packets sugar substitute
    2 c. low-fat milk
    1/4 c. rum or 1/2 tsp. rum extract
    1 tsp. vanilla extract
    ground nutmeg
Preparation
    Beat egg whites at high speed until they form soft peaks.
    In a large bowl with same beaters and high speed, beat yolks and sugar substitute until lemon colored.
    Stir in milk, rum, vanilla and nutmeg.
    With wire whisk, fold beaten egg whites into milk mixture. To serve, sprinkle with additional nutmeg.
    Serve immediately. Makes 5 (1 cup) servings.
