Ingredients

1 qt. strawberries
1 c. water
red food coloring
1 c. sugar
3 Tbsp. cornstarch
3 oz. pkg. cream cheese, softened
baked pie shell
Preparation

Clean strawberries.
Simmer 1 cup strawberries and 2/3 cup water about 3 minutes.
Blend sugar and cornstarch (sifted) with remaining water.
Add to boiling mixture.
Boil 1 minute, stirring constantly.
Cool.
Spread cream cheese over coated pie shell. Save 1/2 cup choice strawberries.
Put remaining 2 1/2 cups strawberries in baked pie shell.
Cover with cooked mixture. Garnish with remaining berries.
Refrigerate until firm, approximately 2 hours.
Serve with whipped cream.
