Sugar-Free Lemon Chess Pie - cooking recipe

Ingredients
    1 (8 oz.) pkg. light cream cheese
    2 regular graham cracker pie crusts
    1 c. boiling water
    3 oz. pkg. sugar-free lemon gelatin
    2 2/3 c. skim milk
    1 (2 oz.) pkg. lemon or vanilla sugar-free pudding
Preparation
    Soften cream cheese to room temperature.
    Bring water to a boil, add gelatin and stir to dissolve.
    Add milk to pudding mix and blend as to package directions.
    Add dissolved gelatin and cream cheese to pudding mixture.
    Beat until well blended.
    Pour into pie crusts and refrigerate.
