German Winter Carrot Salad - cooking recipe

Ingredients
    8 medium carrots, peeled
    3/4 c. mayonnaise
    1 Tbsp. parsley flakes
    1/2 tsp. salt
    1/2 tsp. pepper
    8 oz. bacon, chopped
    1 large onion, chopped
    1/2 c. sugar
    1/2 c. vinegar
Preparation
    Cook carrots in water to cover in saucepan until tender; drain.
    Slice carrots.
    Combine with mayonnaise, parsley, salt and pepper in a serving bowl.
    Mix well.
    Fry bacon in skillet until crisp; drain on paper towel.
    Saute onion in bacon drippings; stir in sugar and vinegar.
    Add to carrot mixture; mix well. Sprinkle with bacon.
    Serve warm.
    Serves 4 to 6.
