Stuffed Acorn Squash - cooking recipe

Ingredients
    2 small or 1 medium size acorn squash
    1/2 tsp. salt
    2 eggs
    1 Tbsp. grated onion
    1 c. grated cheese (Cheddar)
    2 Tbsp. fine bread crumbs
    salt and pepper to taste
    butter
Preparation
    Boil whole squash in salted water until almost tender.
    Remove tops to make cavities for stuffing. Scoop out stringy insides and discard.
    Drain water that collects.
    Beat eggs until frothy.
    Add grated onion, cheese, bread crumbs and salt and pepper. Put bits of butter in each cavity of squash. Fill with stuffing.
    Place butter and bread crumbs on top of each.
    Place in a foil-lined pan and bake in a preheated 350\u00b0 oven for 30 minutes.
    Yields 4 servings.
