Spinach Parmesan Appetizer Pie - cooking recipe

Ingredients
    4 green onions, snipped
    4 Tbsp. butter or margarine
    1/4 lb. mushrooms, chopped
    1 pkg. frozen spinach, thawed and drained
    1 clove garlic, minced
    1/4 tsp. tarragon
    3 Tbsp. minced parsley
    4 eggs
    1/2 c. milk
    1 tsp. salt
    1/4 tsp. pepper
    1/2 c. Parmesan cheese, shredded
Preparation
    Saute onions in butter for 3 minutes; add mushrooms and saute 5 minutes.
    Stir in spinach, garlic, tarragon and parsley.
    Simmer over medium heat, stirring constantly, until liquid evaporates. Beat eggs with milk, salt and pepper; add cheese.
    Combine with sauteed vegetables and pour into a lightly buttered 9-inch pie pan.
    Bake at 375\u00b0 for 35 to 40 minutes or until a knife inserted in the center comes out clean.
    Cut into wedges and serve on individual plates with forks.
    Serve hot or cold.
    Can be frozen and reheated.
    It pays to make 2 pies at once to use up purchased ingredients.
    Serves 6 to 9.
