Gourmet Potatoes - cooking recipe

Ingredients
    6 medium potatoes
    2 c. shredded Cheddar cheese
    1/4 c. butter
    1 1/2 c. sour cream
    1/3 c. finely chopped onion
    1 tsp. salt
    1/4 tsp. pepper
    paprika
    2 Tbsp. butter
Preparation
    Cook potatoes in skins; cool, peel and shred coarsely.
    In saucepan, over low heat, combine cheese and 1/4 cup of butter. Stir until almost melted.
    Remove from heat and blend in sour cream, onions and seasonings.
    Fold in potatoes.
    Put in 2-quart greased casserole.
    Dot with remaining butter and paprika.
    Bake at 350\u00b0 for 30 minutes.
    Serves 8.
