Chicken Croquettes - cooking recipe

Ingredients
    2 Tbsp. fat
    1 c. milk
    salt and pepper to taste
    1/4 tsp. celery salt
    few drops onion juice or small amount chopped onion
    1 tsp. chopped parsley
    1 egg and cracker crumbs (bread may be used)
    1/4 c. flour
    1 3/4 c. cooked fowl
    1 tsp. lemon juice
Preparation
    Make a white sauce with the fat, flour and milk.
    Add fowl, seasoned with celery salt, lemon juice, onion, parsley, salt and pepper.
    Cool.
    Shape and dip into fine crumbs, then into eggs and again into crumbs.
    Fry in deep fat (275\u00b0 to 390\u00b0) from 2 to 5 minutes.
