Linguine With Clam Sauce - cooking recipe
Ingredients

1 lb. linguine
1/3 c. olive oil
3 cloves garlic, minced
2 shallots or green onions, minced
1 c. dry white wine
salt to taste (about 1/8 tsp.)
1/4 tsp. pepper
1/2 tsp. oregano
1 (6 oz.) can minced clams with the juice
1 (6 oz.) can chopped clams, drained
Preparation

Heat oil in medium frying pan over medium heat.
Add garlic and shallots.
Cook until soft, about 3 minutes.
Remove from heat and add wine, clam juice, salt, pepper and oregano.
Cook over high heat until the volume of liquid is reduced to half.
Add the clams and reduce heat to medium.
Cover the pan and steam about 4 minutes.
Cook pasta.
Pour sauce over cooked and drained pasta. Stir sauce evenly over pasta.
Serve with Parmesan cheese.
Salad and garlic bread also recommended.
