Carrot And Zucchini Bars - cooking recipe

1 1/2 c. all-purpose flour
3/4 c. packed brown sugar
1 tsp. baking powder
1/2 tsp. ground ginger
1/4 tsp. baking soda
2 slightly beaten eggs
1 1/2 c. shredded carrots
1 c. shredded zucchini
1/2 c. raisins
1/2 c. chopped walnuts
1/2 c. cooking oil
1/4 c. honey
1 tsp. vanilla
Cream Cheese Frosting
Preparation

In large mixing bowl, stir together flour, brown sugar, baking powder, ginger and baking soda.
In another bowl, stir together eggs, carrot, zucchini, raisins, walnuts, oil, honey and vanilla. Add carrot mixture to flour mixture; stir until just combined. Spread batter in ungreased 13 x 9-inch pan.
Bake at 350\u00b0 for about 25 minutes.
Cool.
Frost with Cream Cheese Frosting.
Store, covered, in refrigerator.
Makes 36 bars.
