Mint Truffles - cooking recipe

Ingredients
    2 c. chocolate chips
    1/2 c. butter
    1 1/2 c. powdered sugar
    2 eggs
    2 tsp. vanilla
    mint or rum extract
Preparation
    Melt chocolate chips in double boiler and cool.
    Combine butter and powdered sugar and cream together.
    Add eggs and beat well. Add chocolate chip mix and 2 teaspoons vanilla.
    Beat until smooth. Add 3 capfuls mint or rum extract.
    Drop from teaspoon onto wax paper-lined cookie sheet.
    Harden in refrigerator.
    Store several weeks.
    Makes 7 dozen.
