Spinach Patties - cooking recipe

Ingredients
    1 pkg. frozen chopped spinach, thawed, drained and squeezed of all moisture
    1 medium yellow onion, chopped
    1 c. fine dry bread crumbs, (seasoned or plain, homemade or commercial)
    3 to 4 large eggs
    4 oz. shredded grated Swiss cheese (Cheddar or Gruyere also work well)
    4 Tbsp. Parmesan cheese, grated
    seasonings (m.s.g., seasoned salt, pepper to taste)
    herbs (parsley, basil, oregano, etc.) to taste
Preparation
    Break
    eggs into large mixing bowl;
    add
    all
    remaining ingredients.
    Mix well as for meat loaf.
    Shape
    mixture into 4 patties, for main course; 8 smaller portions
    for
    an appetizer course. Saute over medium heat in skillet coated
    with no stick cooking spray (Pam) until crispy and browned,
    about 5 minutes. Turn
    patties
    and\tcontinue to cook until browned\tand
    cooked through,
    another
    5 to 10 minutes.
    Keep hot
    until
    ready
    to serve.
    These are especially good with fresh
    tomato
    sauce and freshly grated Parmesan cheese, a green salad and French bread. Makes 2 main course servings or 4 appetizer servings.
