Kentucky Hot Paws(Yields 60 Servings) - cooking recipe

Ingredients
    2 1/2 c. flour (government)
    2 1/2 c. butter (government)
    1 gal. 1 qt. milk
    2 1/2 c. American or Cheddar cheese (government)
    20 eggs
    5 tsp. lemon juice
    10 tsp. salt
    4 tsp. pepper
    grated cheese (optional; government)
    60 slices bread (hoagie or leftover buns)
    60 (1 1/2 to 2 oz.) slices turkey (government, roast or slab)
    60 slices crisp bacon or bacon chips
Preparation
    In heavy saucepan, blend flour into butter until smooth.
    Cook over low heat for 2 minutes.
    Gradually add milk; cook, stirring constantly, over moderate heat until thickened.
    Stir in cheese with a whisk.
    Take 1 cup of sauce and blend into beaten eggs, then add to remaining sauce, stirring constantly for about 1 minute.
    Stir in lemon juice, salt and pepper.
    Arrange toasted bread on pan.
    Top each bread slice with slice of turkey and 1/2 cup of sauce.
    Garnish with grated cheese, if desired, and a slice of crisp bacon or bacon chips.
    Cook 1 minute in moderate oven.
