Egyptian Rice And Lentils(Healthy Recipe) - cooking recipe

Ingredients
    1 c. brown lentils
    3/4 tsp. salt
    1 Tbsp. plus 1 1/2 tsp. olive oil
    1 large onion, 1/2 chopped and 1/2 sliced
    1 tsp. ground cumin
    1/2 tsp. ground cinnamon
    1/2 c. long grain brown rice
    2 c. water
    1/2 c. plain, low-fat yogurt
    pepper to taste
Preparation
    Soak lentils in some hot water for 1 hour.
    Drain and place in a saucepan; cover with water by 2 inches.
    Bring to a boil; add 1/2 teaspoon of salt.
    Reduce heat and simmer 30 minutes or until tender.
    Saute chopped onion in 1 tablespoon of olive oil until golden.
    Add cumin, cinnamon and rice.
    Stir to coat with oil. Add water and lentils with their liquid, 1/4 teaspoon of salt and pepper.
    Stir; bring to a boil.
    Reduce heat and cover.
    Cook 25 minutes, until liquid is absorbed.
