Spinach Cheese Pie(Tortiera Di Spinaci) - cooking recipe

Ingredients
    1 (8-inch) pie crust
    1 (10 oz.) pkg. frozen spinach
    1/2 c. Parmesan cheese
    1 lb. Ricotta cheese
    2 Tbsp. fresh parsley
    1/4 tsp. black pepper
    1/4 tsp. salt
    3 eggs, beaten
    3/4 c. cooked rice
Preparation
    Preheat
    oven
    to
    350\u00b0.
    Bake pie crust for 5 minutes. Cook spinach
    just until thawed.
    Drain and pat dry.
    Combine spinach with
    the rest of the ingredients.
    Pour mixture into pie crust and bake 30 to 35 minutes, until set firm.
    Serve as an appetizer or luncheon.
    Can be served hot or cold.
    Makes 6 to 8 servings.
