Lemon Meringue Pie - cooking recipe
Ingredients

1 c. sugar
1/4 tsp. salt
2 eggs, separated
1 Tbsp. lemon rind
3 Tbsp. confectioners sugar
1/4 c. cornstarch
1 1/2 c. boiling water
1/3 c. lemon juice
1 Tbsp. butter
Preparation

Combine sugar, cornstarch and salt in a double boiler. Add boiling water slowly and stir constantly. Cook until mixture thickens. Beat egg yolks slightly and pour some of the hot mixture over egg batter and stir vigorously. Add egg batter to double boiler and cook for
2 minutes. Remove from heat and add lemon rind, juice and butter; beat well and cool. Pour into pie shell.
