Ingredients

4 c. small to medium beets
1/2 c. brown sugar
1 c. vinegar (white)
1 c. cold water
1 tsp. salt
12 to 14 Tbsp. sugar
2 sticks cinnamon
2 cloves
1/2 tsp. pickling spice
Preparation

Combine sugar, vinegar (white), water, salt, sugar, cinnamon, cloves and pickling spice and bring to a boil.
Add beets and simmer for 20 minutes.
Cool until lukewarm.
Place all ingredients to sterilized canning jars and seal.
Let cool; place in a dark cool place.
Makes about 3 to 4 pints.
