Low-Fat Oat Bran Muffins - cooking recipe

2 c. oat bran
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/4 tsp. allspice
5 oz. all fruit preserves
3/4 c. raisins (optional)
1/3 c. unbleached flour
1/2 tsp. salt
1/4 tsp. baking powder
1 1/4 c. skim milk
2 egg whites, lightly beaten
Preparation

Combine oat bran, flour, baking soda, salt, cinnamon, baking powder and allspice.
In a small bowl, whisk together milk, preserves and egg whites.
Pour liquid ingredients over the flour mixture.
Stir to moisten.
Fold in raisins.
Line 14 cups with liners.
Fill with batter.
Bake at 350\u00b0 for 22 minutes or until brown and firm.
