Egg Yolk Frosting - cooking recipe

Ingredients
    2 egg yolks
    1/8 tsp. cream of tartar
    few grains salt
    2 Tbsp. cold water
    1 Tbsp. lemon juice
    3/4 c. sugar
    1/4 tsp. lemon rind (optional)
Preparation
    Place egg yolks, tartar, salt, water, lemon juice and sugar in the top of a double boiler.
    Place over boiling water (upper pan should not touch water).
    Beat with a rotary or electric mixer for 7 minutes or until mixture is thick and fluffy and holds its shape.
    Stir in lemon rind and spread on cake.
    This icing especially suitable for a white cake as well as Sunshine Cake.
