Zucchini Relish - cooking recipe

Ingredients
    5 c. grated zucchini
    2 c. grated onions
    2 Tbsp. salt
    1 1/2 c. vinegar
    2 1/2 c. sugar
    2 tsp. turmeric
    2 tsp. dry mustard
    2 tsp. nutmeg
    1 Tbsp. cornstarch
    1/4 tsp. black pepper
    1 tsp. celery seed
    2 c. chopped green or red sweet pepper
Preparation
    Mix first 3 ingredients and cover.
    Let stand overnight. Rinse and drain.
    In a large pot, place zucchini-onion mixture and add remaining ingredients.
    Bring to a boil, then simmer for 30 minutes.
    Stir occasionally.
    Pack hot relish into sterile pint jars and process in hot water bath for 20 minutes or use the directions with your processor.
